Betutu is a classic Balinese dish of traditionally smoked/roasted chicken or duck. It is heavily seasoned with a spice paste made from an array of different ingredients including chilli, turmeric, ginger, shallots and more. The paste is r믭 onto the outside of the bird and also st￭ inside the cavity to infuse it with intense flavour. It is then wrapped in several layers of banana leaves for the cooking process.
As a local specialty, betutu is commonly served at ceremonies and it is now available at many hotels and restaurants in Bali. Orders are usually taken for this dish one day in advance as it takes several hours to cook. Chicken and duck betutu can be enjoyed for lunch or dinner at Kayumanis Resto
