Four Fine Chefs

Thursday, September 21, 2017

Our highly-anticipated Chefs Collaboration Dinner will be hosted on 20th October 2017 at Kayumanis Resto Jimbaran. It is expected to be yet another exceptional evening of wining and dining with a menu that explores culinary diversity. This annual event will celebrate local creativity as our four fine chefs come together to showcase their respective talents. Each chef will present a flavourful dish that is extremely personal and tells a unique story.
Chef Oka from Kayumanis Jimbaran will be presenting his appetizer of Marinated Duck and Mushroom Spring Rolls. The delicate balance between these two strong ingredients reminds him of days spent helping out on his grandmother’s food stall where she served Balinese rice porridge. She prepared the same dish every single day with passion and Chef Oka still draws on her traditional ways to reinterpret his dishes.
To spice things up a notch, Chef Made from Kayumanis Ubud will be putting his own twist on a Thai classic with a steaming bowl of Tom Yum Goong. Having grown up in a family that sold Balinese food for a living, he knows just how important it is to respect the original recipe. Known for his creativity and impeccable plating skills, Chef Made will be perfecting his version of this authentic soup.
There will be a choice between two main dishes and Chef Wayan from Kayumanis Sanur is expected to do us proud with his slow braised Beef Rendang. Chef Wayan learnt about food from an early age by helping his mother shop for market-fresh ingredients to cook for the family at home. He has always motivated by traditional Balinese cuisine and finds inspiration by travelling around the island of Bali to eat and chat with local villagers.
The other main dish option will be Lobster Cannelloni by Chef Astawa who presides over two restaurants at Kayumanis Nusa Dua. Driven by an insatiable thirst for learning, Chef Astawa is always keen to expand his culinary repertoire and he spends hours creating new dishes. Being versatile is one of his best traits as he cooks both Italian cuisine at Piasan and Asian dishes for Tetaring will complete ease.
The Chefs Collaboration Dinner brings together four talented chefs for one night only. Although each chef has his own culinary roots, as a team they are united by a shared passion for good food cooked with integrity. Stay tuned for more details about this exciting event.
