Goyang Kawista is the name of a thirst-quenching drink available exclusively at Kayumanis Resto Jimbaran. It is made using a syrup derived from a fruit called kawista (limonia acidisissima), also known as wood apple or elephant apple in English. The fruit is cultivated in the warm climates of Sri Lanka, India, Myanmar, Malaysia and Indonesia, specifically Central Java.
With its unique sweet and sour flavour, kawista is processed to make syrup and jam. The fruit has a hard rind that opens up to reveal a sticky brown pulp that is rich source of protein, carbohydrate and calcium, along with Vitamins B and C. Kawista is also considered an auspicious fruit for offerings to Lord Shiva and trees can be found in Hindu temple compounds all across Asia.
Goyang Kawista contains kawista syrup, fresh lime juice and mint topped with soda water. It tastes a little bit like a cola but lighter and sweeter.
