Klepon Waluh Recipe

In celebration of the slow food movement and upholding local traditions, Chef Wayan Budi from Kayumanis Sanur is sharing his own recipe for Klepon Waluh. This is a delicious dessert of pumpkin dumplings filled with palm sugar and served with grated coconut. Bursting with flavour, these bite-sized morsels of goodness go exceptionally well with a cup of aromatic Balinese coffee.



150 gr chopped pumpkin pieces                                                                                                                 

80 gr rice flour                                                                                                                                           

20 gr white sugar                                                                                                                                                        

2 gr salt                                                                                                                                                                 

50 gr grated coconut                                                                                                                                                

20 gr palm sugar sauce                                                                                                                                   

1 pandan leaf                                                                                                                                                

10 gr diced jackfruit


1.Steam the pumpkin pieces until soft                                                                                                                   

2. Add the rice flour, white sugar and salt and mix to form a dough                                                          

3. Shape pieces of the dough into bite sized dumplings adding palm sugar sauce to the centre of each one                                                                                                                                                   

4. Cook the dumplings in a pot of boiling water and wait until they rise to the surface                                               

5. Serve on a plate decorated with a piece of pandan leaf                                                                             

6. Top with grated coconut and diced jackfruit
