Bebek Panggang Mekudus is the name of a popular duck dish created by Chef Oka. It has become a menu highlight for both domestic and international guests visiting Kayumanis Resto Jimbaran. Preparation involves marinating the duck in a combination of Balinese spices for several hours to infuse the meat with layers of exotic flavour.
Upon being ordered, the duck is cooked to perfection and then delivered to the table on a small clay grill fuelled by charcoal to create a smoky effect. It is served with steamed rice alongside minced chicken on lemongrass skewers, a clear soup with chicken balls and cucumber, mixed vegetables and spicy sambal condiments.
