Traditional Smoked Duck Delicacy

Bebek Panggang Mekudus is the name of a popular duck dish created by Chef Oka. It has become a menu highlight for both domestic and international guests visiting Kayumanis Resto Jimbaran. Preparation involves marinating the duck in a combination of Balinese spices for several hours to infuse the meat with layers of exotic flavour.

Upon being ordered, the duck is cooked to perfection and then delivered to the table on a small clay grill fuelled by charcoal to create a smoky effect. It is served with steamed rice alongside minced chicken on lemongrass skewers, a clear soup with chicken balls and cucumber, mixed vegetables and spicy sambal condiments. This dining package also includes a tasty dessert of purple sweet potato balls filled with palm sugar.

Duck is the only type of meat that high-caste priests on the island of Bali are permitted to eat. Consequently, it is typically served after some sort of special religious ceremony has been performed. As the duck is able to exist on land and in water, it has great spiritual significance and is considered somewhat of a local delicacy. Therefore, this culturally-inspired dish honours Bali’s colourful Hindu heritage. Bebek Panggang Mekudus is signature to Kayumanis Resto Jimbaran and only a limited number of portions are made available each day.
